Hi Kate,
Trader Joe’s had an organic Fall Zucchette pasta–a butternut squash that looks like little pumpkins and I couldn’t resist buying it. I tried it tonight with your mac and cheese variation and it was delicious! I felt much better after eating it than I do after eating the old-fashioned Mac and Cheese. This is lighter and I’m glad to know the squash is in there instead of pure cheese. Thanks for your creativity!
