In reply to Cookie and Kate. I made them for the guests this morning, a double batch this morning and they loved them. Turned out beautifully, great recipe and the 10 minute rest made a noticeable change in the batter. Used cast iron skillets.

Bob’s Redmill 1:1 flour is actually very good. I’ve never had a bummed experience using it. I can use it for just about anything. All my sweet breads, waffles and pancakes turn out light and delicious. I also use almond flour but i use it for real, preferring not to use a substitute. I highly recommend Bob’s 1:1 flour.

Made this recipe today, making my own oat flour. Absolutely delicious. I discovered only a non-stick pan works well (as the recipe stated). Family loved them. My only change was a decrease in salt.

Hi Kate, wow this is right up my alley! I have bananas i need to use up. One question, i mainly use Bob’s Redmill 1:1 flour so I hope it will work in this recipe. Thanks again, your recipes are all so delish!
