I made this to go along with omelets for our 4th of July breakfast. It was so good that I did not even want to eat the omelet. And, I am very excited for leftovers to eat for lunch.

This was pretty good, although I felt like it was a little balsamic-forward. I probably could have added another cucumber to even out to my preferred dressing ratio. Props for being mayo-free, too! My cucumber and avocado salad loyalties still lie with Deb at Smitten Kitchen and her Obsessively Good Avocado Cucumber Salad but I’ll keep this one in my pocket for when I’m feeding vegans or the mayo hating crowd.

They’re called Lebanese cucumbers here in Australia. I’m planning on making this salad this weekend to take to an Australia Day luncheon. Can’t wait to impress!

I am not sure if I did something wrong but this was not as flavorful as I had hoped. I followed the recipe exactly-it was not a crowd pleaser in my house, unfortunately.

I made this for my Swedish family and they loved it. So easy (took about 10 minutes to put together) and so tasty!
