I have made this recipe countless times, and it is phenomenal. I really change nothing, except swapping spinach for the collard greens because I always have spinach in the house. I LOVE the addition of the curry and definitely think the flavors are enhanced with the max amount of lemon juice called for. I usually make a protein to go alongside this, but today I just dumped leftover rotisserie chicken right into the pot. Delicious. Thank you for a fool-proof lentil soup recipe!
