I admittedly like this better than Florentine panzanella (the kind where stale bread is rehydrated in water). I find the sogginess in that version unpleasant. In this version, the croutons will still soak up some moisture, but will become slightly chewy rather than soppy and floppy.

To make this Panzanella, it needs mozzarella. I don’t think having more than one dish with mozzarella would be a bad thing. I hope it’s a hit!
