This vegetarian enchilada with sweet potato and black beans was really delicious. Even our tenns liked it. It is a sure keeper and will add to my rotation. Yummy and easy too!

In reply to Manuela Vieira-Ribeiro. Hi Manuela, you will have to bring up the temperature of the oven, and these don't bake for all that long, so I think it's worth it to just assemble then bake at your gathering.

These are incredible. I made them with homemade red chili corn tortillas and only had red enchilada sauce. I didn’t have feta but that would have only made them even better. This will become a constant in my meal prep rotation. Thanks for another great recipe.

I’m looking so forward to this — I have all the ingredients ready to assemble, but I am bringing this dish to a family dinner tonight. I’m not sure if my mother-in-law will be keen on turning on her oven on this hot day to bake the enchiladas on my behalf. What do you suggest? Assemble and bake there, or assemble and bake at home and reheat there? (if reheating, in the oven which will still need to be used, but maybe for less time, or ??). I’ll leave a review later after we have tried the dish. Thanks in advance!

I just made this for my Sunday Dinner Date Night with my husband and we LOVED it! And he’s so picky! I made a couple of slight adjustments, since we can’t really do salt, I did extra garlic and some sodium free garlic herb seasoning, a half a cup of cilantro instead of a quarter, and I always use about 3 or 4 ounces of extra cheese. But I can’t help that bit. Overall, a fantastic recipe that was easy to make and will definitely be added to my go to rotation. This is the fourth recipe I’ve made from your website and GIRL! I’m hooked! Thank you so much for a whole new world of healthy vegetarian home cooking!

i thought i didn’t like sweet potatoes but my partner does so i made this recipe. wow am i so glad i made it! this is absolutely delicious and easy to make! i guess i do like sweet potatoes now haha

Very dry. Next time I’d make a tomato salsa as well as a base.
