i thought i didn’t like sweet potatoes but my partner does so i made this recipe. wow am i so glad i made it! this is absolutely delicious and easy to make! i guess i do like sweet potatoes now haha

Pablo – La Preferida sells tinned “green Mexican tomatoes” in the UK. Take those, roast some jalapenos (and/or poblano peppers if you have them, I can’t remember if they’re readily available or not), onion, cilantro (coriander), lime juice, a little olive oil, roast it all up in the oven in a sheet pan and then blend it together. Boom, salsa verde.

This recipe is so delicious and filling without feeling heavy. I used white corn tortillas and found they fell apart a bit, next time may try a different type but such a good recipe!
