This is a really good combination of flavors! Used all broccoli (not a fan of brussels sprouts) and canned lentils because that’s what I had. Stored the salad separate from the lemon dressing and when combined voilà, so good!

In reply to Karen marlena Chan. Hi Karen, I prefer the bite of black lentils in salads, but green lentils will work. They just don't hold together quite as well and may get mushier.

I used the dressing for another salad and for a marinade for chicken. It was yummy! Next time, I will make the whole salad.

Just riffed on this based on what I have on hand for a clear-the-fridge/pantry side. Subbed quinoa for arugula because I was out of leafy greens and doubled the dressing and items delicious // tons of leftovers that I can throw over greens later. Will make again!

I’m prepping this now for a long airline trip in my bento box! I’m vegan and I want something filling and delicious and I know this will do the trick. Versatile….I have to use broccoli, roasted potatoes, lentils etc. Including the vegan parmesan and I’m looking forward to it already. I hope the beluga lentils aren’t too well done, I have cooked for 20 min before and they were mushy. I may test earlier.
