I wanted to make a single portion of this and only had frozen butternut squash. I followed the recipe as closely as I could but may not have been perfect with reducing the quantities. As I only had frozen squash I just boiled it first.

I was really apprehensive about if it would work and break down like yours does, I was happy for it to not be as smooth though. It still worked perfectly – I couldn’t believe it! So creamy and smooth, rich enough without being too much. I loved it and will definitely be a regular quick meal! Thank you :)

My family and I loved this recipe! I ended up roasting an onion and some garlic with the squash (about half the amount of time) and puréed it all instead of mashing, and it worked out just great. Also followed one of the comments below to sub one of the cups of water with milk and add a little nutmeg. So yummy, one of the few leftovers I’ve continued to go back for!

In reply to Debra. Hi Debra, yes I sometimes roast butternut squash and then freeze it in Souper Cubes and have used that when making this recipe.
