I have made this several times (always double the kale so it’s really more of a salad), but I actually think this gets better with time. The leftovers, if you have any, are great for several days after! I’ve taken it to potlucks and everyone loves it, even those who claim not to like kale. You can also substitute spinach for the kale, but I don’t know that it would keep as well.

I made this for Thanksgiving and it was a huge hit! I subbed the wild rice for farro (personal preference). Great combination of textures. I don’t usually use goat cheese and had even contemplated using feta instead, but am glad I stuck with the original because it afforded a nice creamy texture to an otherwise crunchy dish. I will be making this again and again all winter long!

I made this beautiful salad on Thanksgiving 2025 and you weren’t kidding about the amount of prep! It was a show stopper and my wife and my sister loved it, was a real hit!

This is a masterpiece. As a vegetarian who always has not great feast options, this is a game changer. I used local Minnesota wild rice, the maple syrup we make on our property, and a butternut squash from a neighboring organic farm. Thank you for all the joy this brought me!
