<p>This slaw is irresistibly crisp and tangy, with a simple honey-mustard dressing. Shredded Brussels sprouts&mdash;the finer you shred them, the better&mdash;make a crisp-tender base. Freshly toasted almonds offer some savory crunch, Parmesan adds some salty richness, and sweet dried cherries (or cranberries) send it over the top.</p>

<p><strong>Let&rsquo;s talk about this healthy slaw recipe.</strong> It&rsquo;s proof that sometimes, the most humble of ingredients can make for the best recipes.</p>



<p>Take cheap cabbage, with all of its potent antioxidants, and toss it with carrots, the humble root vegetable that is packed with beta carotene. Drizzle in a simple, garlicky lemon dressing (no mayonnaise or vinegar here). For extra texture and savory flavor, add some freshly toasted seeds to the mix. Toasting them makes all the difference.</p>

<p><strong>This slaw is one of my favorite simple side dishes,</strong> so I&rsquo;m sharing it today with updated photos in the hopes that it captures your attention. It keeps well in the fridge for up to four days, so it&rsquo;s a very easy way to add a burst of color and fresh flavor to your meals.</p>



<p>Of course, this slaw goes great with <a href="https://14.canadaremotejob.infinityfreeapp.com/best-veggie-burger-recipe/">veggie burgers</a> and grilled mains in the summertime. <p><strong>I never knew I&rsquo;d be so excited about a raw carrot salad.</strong> Then again, I&rsquo;m not sure I&rsquo;ve ever had French carrot salad before! Have you? Carrot salads are ubiquitous in France and we&rsquo;ve been missing out.</p>



<p>I&rsquo;m generally a fan of big, bold flavor, but French carrot salad <em>(salade de&nbsp;carottes r&acirc;p&eacute;es)</em> is a delicate balance of sweet raw carrot, tangy lemon juice, olive oil, Dijon mustard and herbs. This carrot salad is a lesson in restraint and tastes more complex than it is.</p>

<p>I discovered this carrot salad at <a href="https://www.frenchmarketkc.com/" target="_blank" rel="noopener noreferrer">French Market</a> in Kansas City. The girls behind the counter always have French accents, so you know the restaurant is legit.</p>



<p>They offer a variety of pre-made salads and sandwiches, and I couldn&rsquo;t resist the glowing orange carrot salad. Their version includes chickpeas, which offer some protein and bulk.</p>



<p>I was really surprised by how much I loved that fresh, crisp-tender, sweet-and-savory carrot salad, so here we are. French carrot salad is a lovely side dish to offer at picnics, in packed lunches, with sandwiches, and so on.</p>

<p><strong>I&rsquo;m re-introducing one of my all-time favorite recipes today!</strong> It&rsquo;s a colorful slaw with tender soba noodles, tossed in sesame-ginger peanut sauce. Need I say more?</p>



<p>Ok, I&rsquo;ll tell you more about it. It&rsquo;s packed with nutritious vegetables, including carrots, cabbage and Brussels sprouts. This slaw is crunchy and satisfying, filling and full of flavor.</p>

<p>This recipe can satisfy your main-meal cravings (it packs great for lunch), or it can make a statement side dish. It&rsquo;s easily made vegan and/or gluten free, making it an all-star potluck option.</p>



<p>This slaw is made with more vegetables than noodles, so it&rsquo;s nice and light. I tend to get snacky when I&rsquo;m feeling anxious or unsettled, so I&rsquo;ve been taking a fork to this slaw in those moments. Chomp chomp chomp!</p>

<p>It&rsquo;s also seriously addictive, thanks to the sweet-and-savory combination of freshly toasted sunflower seeds, dried cranberries and cheddar cheese.</p>



<p>I borrowed the honey-mustard vinaigrette from my <a href="https://14.canadaremotejob.infinityfreeapp.com/honey-mustard-brussels-sprout-slaw/">Brussels sprout slaw</a>, and it plays up raw broccoli&rsquo;s best features. <strong>Who needs mayo when you have creamy and tangy honey-mustard dressing?</strong></p>

I don&rsquo;t know, but <em>coconut slaw</em> doesn&rsquo;t do it justice. I do know that if you are a coconut fan, you should make this as soon as possible. You&rsquo;ll be glad you did!</p>



<p>This whatever-you-call-it slaw was roughly inspired by some coconut tostadas I enjoyed at <a href="https://holaarepa.com/" target="_blank" rel="noopener noreferrer">Hola Arepa</a> in Minneapolis this summer. (I say <em>roughly</em> mostly because <a href="https://www.instagram.com/p/BWLwej-H-6n/?taken-by=holaarepa" target="_blank" rel="noopener noreferrer">the original version</a> was much prettier.)</p>

<p>I already <a href="https://14.canadaremotejob.infinityfreeapp.com/black-bean-salad-recipe/">went on</a> about how amazing they were, but everything at that restaurant is amazing. I would eat breakfast, lunch and dinner there if I could. I would apprentice there to learn all of their secrets if I could.</p>



<p>Anyway, Hola Arepa topped tostadas with poblano-avocado spread and a &ldquo;ceviche&rdquo; made with fresh strips of coconut meat marinated in lime. I don&rsquo;t know where to buy fresh coconuts, and even if I did, I&rsquo;m fairly certain I would lose a finger trying to slice it.</p>



<p>I used big, dried, unsweetened coconut flakes instead. Given that I had to stop myself from inhaling this giant bowl of coleslaw in one sitting, I&rsquo;d say that it worked.</p>

<p>I tend to keep to myself, especially in yoga class. It&rsquo;s not a very social form of exercise, you know? Last year, when I walked into my usual Tuesday evening yoga class and my instructor shouted, &ldquo;COOKIE AND KATE,&rdquo; I froze. Kim, a regular in the class, had learned about my blog through her co-worker, and she said, &ldquo;I know her! I go to yoga with her!&rdquo;</p>



<p>Then Kim told Kristina, the teacher, and then everyone found out. Including Amie, one of my favorite instructors, who is great friends with Kate Kasbee of <a href="https://wellvegan.com/" target="_blank" rel="noopener noreferrer">Well Vegan</a>. Kate lives in Chicago and was working on a cookbook called <a href="https://amzn.to/2fqA9CO" target="_blank" rel="nofollow noopener noreferrer">Frugal Vegan</a> at the time.</p>

<p>Through the Amie-Kate connection, I got a sneak peek at Frugal Vegan and wrote a blurb for the back cover. &ldquo;Frugal Vegan offers an incredible array of fresh and simple vegan recipes. Every single one of them manages to be easy to make, affordable and accessible, too.&rdquo;</p>



<p>Kate came to town for Amie&rsquo;s birthday party, so I met her for drinks, and a giant green bug landed in her herbed green cocktail. Are you still following? I can&rsquo;t make this stuff up.</p>



<p>Kate and I bonded over the trials and tribulations of cookbook-making, our love for our funny-looking pups (<a href="https://www.instagram.com/p/BBNcIEcnCkG/?taken-by=katekasbee" target="_blank" rel="noopener noreferrer">meet Rex</a>), and the green bug experience. We practiced our half-moon poses at Amie&rsquo;s backyard birthday party the next day. Maybe I shouldn&rsquo;t be so shy about my work, since it opens so many fun doors.</p>

<p>What a weekend. On Friday, I zoomed six hours southwest to Woodward, Oklahoma, for my grandmother Virginia&rsquo;s 85th birthday party. On Saturday, I zoomed six hours back to pick up Cookie before the boarder closed, on a different route that was supposed to save me, like, ten minutes. I ended up on a construction detour over red dirt roads and got pulled over for speeding by a policeman in a pick-up truck. (Look, Mom, no ticket!)</p>



<p>On Sunday, I hosted the first stop in <a href="https://www.gimmesomeoven.com/" target="_blank" rel="noopener noreferrer">Ali</a>&rsquo;s bachelorette party, which concluded with ten girls belting Alanis Morissette lyrics in a private karaoke room. And yesterday, we celebrated Jordan&rsquo;s soon-to-be-here baby with a decidedly chill baby shower. Today, I&rsquo;m resisting the urge to pour myself a third cup of coffee.</p>

<p>Surely I&rsquo;m not the only person who over-indulged this weekend, right? Let&rsquo;s reset with a simple, inexpensive, and addictive celery salad. I included chopped celery in two salads in <a href="https://14.canadaremotejob.infinityfreeapp.com/love-real-food-cookbook/">my cookbook</a>, but this is my first celery-centric salad. It&rsquo;s a crisp, refreshing and totally underrated salad ingredient.</p>



<p>I found the recipe in a new cookbook called <a href="https://amzn.to/2sjaqNW" target="_blank" rel="nofollow noopener noreferrer">Six Seasons: A New Way with Vegetables</a> by chef Joshua McFadden and Martha Holmberg. Kat Sacks from Epicurious sent the book to me so I could participate in this month&rsquo;s edition of <a href="https://www.epicurious.com/tag/epicookbookclub" target="_blank" rel="noopener noreferrer">#EpiCookbookClub</a>&mdash;each month, Epicurious is selecting a cookbook to cook from, and you can participate by tagging your food photos #EpicCookbookClub on <a href="https://www.instagram.com/explore/tags/epicookbookclub/" target="_blank" rel="noopener noreferrer">Instagram</a> and Facebook. I love it.</p>



<p>I&rsquo;m quite smitten with Six Seasons. It&rsquo;s a gorgeous seasonal cookbook that highlights a wide variety of produce and offers inventive recipes for each type. I&rsquo;ve bookmarked a ton of recipes to try and picked this one to try first, since McFadden said it&rsquo;s one of his favorite dishes.</p>



<p>I&rsquo;m learning a lot from his produce introductions. For example, in the celery intro, I learned that celery is super-thirsty and needs a lot of attention from growers, which is why you don&rsquo;t find it often at farmers&rsquo; markets. It gets tough and stringy when it&rsquo;s not consistently and adequately watered. Have you seen heirloom celery varieties in purple or magenta yet? I&rsquo;m keeping an eye out for them now.</p>

<p>Confession: I wanted to include this tangy broccoli slaw recipe in my <a href="https://14.canadaremotejob.infinityfreeapp.com/20-epic-salad-recipes/">epic salads roundup</a> (it deserves to be in it), but the photos were so green and unappetizing that I couldn&rsquo;t do it. All I could think when I looked at the post was, &ldquo;Ribbit, ribbit, ribbit!&rdquo;</p>

<p>Even with a pop of complementary color (the coral napkin), the slaw is undeniably very green as written. I&rsquo;ve heard from some commenters who have added some color with dried cranberries or chopped apple, which sound like delicious additions to me.</p>



<p>This broccoli slaw was roughly inspired by an awesome mayo-free broccoli and potato salad that my friend Sarah brought to a spring potluck two years ago. It&rsquo;s not too far off from my <a href="https://14.canadaremotejob.infinityfreeapp.com/greek-broccoli-salad-recipe/">Greek broccoli salad</a> and <a href="https://14.canadaremotejob.infinityfreeapp.com/raw-beet-salad-with-carrot-quinoa-spinach/">colorful beet and quinoa salad</a>, but it was just too good to keep to myself.</p>
