So yummy!

When I was a girl, before I became a vegetarian, my favourite lunch was tuna-salad sandwiches with chicken noodle soup. I recently discovered I can make ‘tuna’ salad with heart of palm, but never really had a good substitute for the chicken noodle soup – until now. This soup is so perfect and comforting, and it really hit a nostalgia spot for me. If I hadn’t made it myself, I’d be concerned that I was eating actual chicken noodle soup.

THANK YOU! This one will definitely be a part of my regular rotation.

In reply to Wendy. Hi Wendy, you should always use a recipe that has been tested for canning purposes when preserving in that method. This recipe was not developed for canning.

I just made this and was so disappointed. It wasn’t that great. I used Trader Joe’s low sodium vegetable broth & even added more spices. Maybe it will congeal & taste better later? ‍♀️ There were several good reviews, so I was excited to try it.

Has anyone tried preserving this via pressure canning? One of my kiddos is a VERRY PICKY eater. She actually liked this soup (the rest of us LOVE it). She’s heading back to campus, and doesn’t have access to a real freezer, so I am going to try canning the veggies and broth with out the pasta. Any suggestions would be appreciated. Thanks.

Absolutely delicious! I’ve made several pint size mason jars of the pasta and seasonings to have on hand in the pantry for busy nights. It saves me time getting everything out and having to measure. I also have my onions, celery and carrots already chopped up and frozen in quart size freezer bags. When I’m not feeling good, it’s so much easier to pull the bag of frozen vegetables out of the freezer, saute them up and add the pre-measured jar of dry ingredients, the can of chickpeas, etc and get super on the table faster. I do add a tbsp or so of garlic , because we love garlic, but otherwise, this recipe is delicious as it is written.

Thank you so much for this recipe. I’ve sent jars of the dry ingredients with cans of chickpeas over to neighbors when they’re sick with the link to your website and this recipe.
