Hi Kate! Thank you for this recipe. I had some leftover black and white beans from a previous meal and a couple of leftover roasted zucchini I wanted to do something creative with! So I made this recipe but i used only red sauce and they were a complete hit! Thank you so ever much!

Made these last night for Christmas Eve dinner – Delicious! I had prepared the red and green sauces the day before and had them waiting in the fridge. I poured the sauces the long way down the pan, so each enchilada was half red, half green. Sprinkled cotija cheese and cilantro down the middle when it came out of the oven.
The sauces are delicious too!

In reply to Sheryl. Hi Sheryl, spread the tortillas across a large, rimmed baking sheet and bake just until they are warm and pliable, about two minutes. Stack the tortillas and wrap them in a clean tea towel to keep them warm. Wrapping in the towel allows them to steam a little, making them soft. You still need to be gentle with storebought tortillas. If you make homemade tortillas, they are very easy to work with.

I can’t master tortilla rolling. I’ve warmed them one instance, let sauce sit on them another time but they break after they’re rolled so I have also just layered the sauce between them like lasagna cutting squares for servings. What should I do to make the rolled tortillas work as directed?

Just made the sauces and am planning on these for a holiday dinner! How far ahead could I make the enchiladas themselves? Could they be prepared and frozen or would the veggies be mushy? Thanks for any make ahead tips!
