Love this simple Pico recipe, made it “neat” numerous times, and have tried it by adding a half cup Sweet Corn (fresh cut off the cob) and a quarter cup of finely cube fresh pineapple. LOVE the Sweet Spicy of this variation, too!!

You are not the slowest chopper! It does take longer to finely chop everything. Maybe quicker with machines. I think most recipes underestimate the time it takes to do things. It’s easy to get away with since everyone will be different and it sounds more tempting to try. In the end it’s about how much you like the finished product. This is a good recipe.

In reply to Amanda. I use a small handy electric chopper. Only $20 at Walmart. Makes chopping quick and easy.
