Love the color in this salad. I had to change the dressing because something was off for us and we couldn’t pinpoint what it was. It may be our palate (we’re Argentinians living in Uruguay), I suspect it was the apple cider vinegar. Other than that, I love this combo and finding a way to elevate a slaw and using up radishes.

I have ARFID and have been trying to get exposure to veggies more. Radishes and coconut are “safe foods” for me so I gave this a try and even tho I think I cut the onion a little small (it is very onion forward lol), I love it!!! We will have it as a side when we do pulled pork sandwiches tomorrow but I am loving it for lunch today. Thank you for helping me add red cabbage and red onion to my safe food list haha.

This is now my favorite cole slaw recipe. Not only is it delicious and easy to make, it lasts several days and doesn’t get soggy. Another plus is its presentation. I thought two cups red onion might be too much but it’s not. The surprise ingredient is the coconut!
