Hi Kate,
Made this again yesterday. This time I used Jovial's organic einkorn whole wheat flour, Bob's Red Mill organic medium grind cornmeal, 1/2C brown sugar rather than maple syrup, and frozen whole cranberries that I defrosted on a plate (haven't seen fresh ones in the store yet this season). It turned out GREAT as always. Love the little texture from the coarser cornmeal.

Hi Lee, I haven't tested this recipe as muffins, but I would start at 375F and check them for doneness beginning at 15 minutes. If you try it, please share how it turns out.

This is a great side dish, or you can serve it as a dessert. I think it depends on what you are serving it with!

I know this is an old post but I am curious if this is served as a dessert? Side dish? Being from the south, I have only ever served cornbread as a side with beans and chili and such or used to make cornbread or seafood dressing so I'm trying to figure out the use, it looks like a sweetbread?
