Hi Kate,
Made this again yesterday. This time I used Jovial’s organic einkorn whole wheat flour, Bob’s Red Mill organic medium grind cornmeal, 1/2C brown sugar rather than maple syrup, and frozen whole cranberries that I defrosted on a plate (haven’t seen fresh ones in the store yet this season). It turned out GREAT as always. Love the little texture from the coarser cornmeal.

In reply to Lee. Hi Lee, I haven't tested this recipe as muffins, but I would start at 375F and check them for doneness beginning at 15 minutes. If you try it, please share how it turns out.

I know this is an old post but I am curious if this is served as a dessert? Side dish? Being from the south, I have only ever served cornbread as a side with beans and chili and such or used to make cornbread or seafood dressing so I’m trying to figure out the use, it looks like a sweetbread?

I love salt but this was pretty salty even with the sweet maple syrup and tart
Cranberries. Cookie and Kate are
So solid with recipes, I don’t think I will try this again and my 50 year old well seasoned and used skillet looked so perfect all dolled up with cranberries and a perfectly browned crust.
