We eat a lot of meat in our high protein/fat and very low carb diet. Occasionally, I want a creamy comfort food as a dinner side and this really fits the bill! Plus, our ancestors knew to cook spinach with plenty of fat (as in milk, cream cheese etc.) for proper digestion and absorption. & Thank you for this simple yet scrumptious addition to my rotation!

Thanks! Perfect easy recipe to try when you’re stuck with extra spinach. I cook for one now. Once I use my fresh spinach for salads or sandwiches from those 16 oz. bags, I eventually end up having to toss a substantial amount in the trash. With this recipe, I want be wasting spinach and it is so good as a side dish or dip.
