Hi there, white whole wheat flour is a 100% whole grain flour made from hard white wheat instead of traditional red wheat. Whole wheat pastry flour is milled differently, and is best in recipes that rely on baking soda or baking powder rather than yeast. It doesn't have as strong of gluten, so isn't great for breads.

Kate is correct. I make homemade pizzas all the time and cook them at 500°F on a pizza stone in my oven. Now that I've seen Kate's grilling recommendation, I'll give that a try. But do not be hesitant about the temp...pizzas need to be baked in high heat.

Wonderful recipe; the fastest pizza I have ever made! My first time ever using instant yeast (usually use regular yeast or sourdough starter). The crust was amazing! I used what I had--whole grain spelt flour and unbleached. For my personal preference, next time I think I will use half the honey and let the dough sit for 10 minutes (the second pizza was fluffier), but everyone loved it as is and it was a big hit! Thank you, again!

I've looked for chewy, doughy pizza dough my entire life until recently! It's exactly like Kate's except I use white all-purpose flour, omit the parmesan, and bake it at 425 F. Now I can't wait to try it with wheat flour. I make 4 single serving pizzas from this recipe, using one and freezing 3. My stand mixer does all the work, using a dough hook for 8 minutes on low. I feel much more confident now that I've read Kate's recipe and tips. Thanks, Kate!

This recipe works. I cut the recipe in half to make one pizza. I rolled it out to about 1/4 inch thick and put the crust in the pre heated oven without toppings for 2-3 minutes before putting on the toppings. The pizza was delicious and the crust was very good though a little more dense than I like. It may be that whole wheat flour is too heavy to get a lighter dough but it was still very good. I an going to use this recipe again and try rolling it out even thinner. After that I may try substituting some of the whole wheat flour with white flour. Anyway, I think this is a good and very easy recipe for whole wheat pizza dough, you just have to work with it to suit your preferences

Game changer!! :-) I love to use whole wheat flour and have very seldom made pizza - not even once a year, so definitely not enough to get good at making the dough or even find a favorite recipe. Until today! This recipe turned out perfect, and took away my sense that I can't make homemade pizza. I love that it uses instant yeast and needs no rise time, because usually that has been the variable that discouraged me from even trying. I used freshly ground white wheat flour and this recipe worked perfectly! I didn't have parmesan cheese on hand, so I put a teaspoon of garlic powder in the dough just for added flavor. Yummy! Thank you so much!

Hi Amy, I haven't tested it, but you can generally substitute Einkorn flour 1:1 for whole wheat. It does absorb moisture differently, so you might get a stickier dough. If you try it, please share how it turns out.
