I’ve made these with peaches, and I’ve also made them instead with a finely diced apple, added just before I started cooking the pancakes. I much prefer the version with apples! In that version, I left out the ginger and increased the cinnamon.

As much as I love creating new recipes, there are some old favorites that are worth sharing again, so I highlight seasonal favorites in newsletters and on social media occasionally. These are one of my favorite ways to use peaches!

Didn’t realize that these were first posted in 2014. But I know that I love & trust your recipes so I had to make these. I just made them & my family & I are already hooked! They are super delicious! So, so good! They’re fluffy and light for being made with just oat flour. I used coconut oil because I preferred that over butter. These are really great! Thanks for sharing these wholesome & delicious recipes Kate, you’re saving lives out here and I’m all for this! God bless you and yours and I hope you’re working on that 2nd cookbook!

I had about 1 cup gf pancake mix left (Pamela’s) and used it the same as oat flour. These turned out delicious! Nothing like fresh summer peaches and pancakes! I want to make the blueberry lemon next. Thanks for the great recipe.

These were delicious. I had to add some almond milk as the pancake batter was too dry and I also added collagen and walnuts. My peaches were overripe so I had to dice them but they were really good. We had them with peach preserves. Thank you!

These are winners!! Had a lot of peaches on hand and made these as directed (used coconut oil and made my own oat flour). Very tasty and felt weekend worth in result. Big hit and very visually appealing as well! My 2.5yo also enjoyed making and eating them with us. Thank you so much!
