Hi MJ, I wouldn&#039;t risk it with flax eggs or without eggs altogether. You can use flax eggs with the banana oat pancakes and drop eggs in whole wheat pancakes, but these are delicate and really need the egg for the structure.]]></description>

I make my own oat flour by blending rolled oats in a blender, and I find that you need a bit less than a full cup of rolled oats (maybe about 3/4 cup?) to make a cup of oat flour.   I also used olive oil because I didn&#039;t really want to scoop and melt coconut oil, and it worked great.]]></description>
