In reply to Cicily Corbett. Wright's is another brand of liquid smoke that's just water and hickory smoke concentrate. They also bottle both mesquite and applewood liquid smoke, though I haven't tried those. I plan to try the coconut bacon, and the salad, so I'm glad I have a bottle of smoke in my pantry. (And I just noticed a recipe for carrot bacon on their website. Carrot strips even look kind of like bacon.)

I am not going to be able to get this salad out of my head unless I get it into my belly! I love fruit in my salad and am so happy you’ve introduced me to coconut bacon! I feel like my salads will never be the same…in a good way.

I LOVE this salad! I skipped croutons and added avocado, and did tuscan kale instead of curly. Amazing!
