					<description><![CDATA[Oh my goodness! So easy and tastes better than store bought that I paid $12 for!! Note to those struggling:
My vitamix blender seized or overheated while making this. I ended up having to take out some and put into my nutri ninja food processor and pulse until it was  creamy. Then emptied that out and did a little more, then did the last bit. Do a little at a time should help the machines a bit. A little extra work but it was worth it to save $12!!!]]></description>

It was fun watching it transform from solid almonds to a semi-liquid nut butter in my food processor.  Added the salt, cinnamon, and vanilla. The flavor is much better than store-bought and is worth the time.   I left out the maple syrup because I will use it in other recipes.]]></description>

I used the food processor attachment of my Ninja AutoIQ Blender System, which I use to make big batches of pesto with decent results. From the moment I started processing the warm nuts in the machine, until it reached the creamy consistency of almond butter, took a full 40 minutes. (It didn&#039;t &quot;seem&quot; like that long because I was on-task the whole time, but I timed it because I was curious. My machine runs for 2-minute cycles before it stops automatically. I started with one cycle on low, scraped it down, one cycle on medium, scraped it down, and the rest on high, scraping down after each 2-minute cycle until I didn&#039;t need to scrape anymore. I did pause for a full five minutes once because the mixture got &quot;crazy hot.&quot; Perhaps because of the configuration of my blades, mine didn&#039;t turn into a ball at all, it just turned into almond butter. I got scared by comments about the mixture seizing up after adding maple syrup or flavoring, so I started with a bit of salt and some cinnamon, which seemed safer. After it cooled down to skin temperature, I dripped in a bit of almond extract while running the machine. A few minutes later I drizzled in a bit of maple syrup while running the machine. Success! It&#039;s not as velvety smooth as commercial nut butters--there&#039;s a tiny bit of almond &quot;grit&quot; in the mouth feel--but it&#039;s delicious and won&#039;t last long around here.]]></description>
