In reply to Christine Cervantes. Hi Christine, the general definition of vegetarian is to avoid eating meat, but most still eat some animal products (like cheese, eggs, or honey). I include vegan options for some dishes and eat vegan, or completely plant-based, often, but do cook with eggs, dairy, and honey.

Hi Kate, thank you for your correct answer to vegetarians…they mostly do eat eggs and cheese! People need to get their terms correct. It is vegans that eat nothing that comes from animals…eggs, cheese, jello, etc

If MORE than four people eating, heat (350°) a cupcake tin in oven about 5 minutes. After heated, remove from oven and spray each well with oil. Break an egg into each well and return to oven until cooked so no clear white is present. Using a narrow spatula slide each egg onto waiting tortilla.

Huevos rancheros was the first thing I ate when visiting the US a few years ago in a diner in Santa Fe. It was so delicious. I found corn tortillas and tried your recipe and everyone loved it! It took me back to New Mexico. Thank you for sharing, the recipe is great!
