Made this yesterday – it’s SOOOO good! I used Cabot 10% milkfat Greek Yogurt and it gave it such a smooth and creamy feel. The honey did indeed keep it from getting too firm and combined with the mango was so delicious. I may experiment with a slightly lower fat yogurt (though 10% is still way better than the 30 something you get with heavy cream!) and slightly less honey (was a little too sweet with the very ripe mangoes) but it was absolutely delightful and I will definitely be making this again! My tree is making a bumper crop of apricots this year so I made apricot froyo! I used a scant 4 cups of apricots, but I think more would have made it more flavorful.
