Send made the salad last night for a vegan and a carnivore. Adored by both!! I did serve some grilled shrimp over the top. When everyone was done eating the entire thing I had to make the rest of the bag of the chile spiced pepitas so they could take them to work for a snacks the next day. So glad I found you. Can’t wait to try another recipe-probably tonight. Thankyou!!

I’m not usually one to write reviews but I had to for this salad… it’s SO good. I have a handful of “wow” salad recipes that I rotate through and this one is being added to the mix for sure! The dressing is perfect (I was eating it by the spoonful) and everything goes so nicely together. The roasted chili pepitas are such a nice touch. I was looking for a green salad with a bit of a Mexican flair to complement a Mexican-style supper and this was perfect. Lots of compliments. Thank you so much for the fabulous recipe!
