I haven&#039;t made it for a few years now and recently had a huge craving for it, so it&#039;s on the menu for tonight. I live in kind of a remote area, so I didn&#039;t have some of the ingredients for the sauce. Here were my substitutions and the recipe turned out as good as I remember (possibly better). Peanut butter sub homemade cashew butter, soba noodles sub homemade Einkorn WW noodles, tamari sauce sub coconut aminos, fresh cilantro sub dehydrated cilantro (fresh would have been so much better). Our local raw honey has a lemon taste to it, unlike any other I have ever tried. It was perfect. I sampled some, but can hardly wait for dinner.]]></description>

This is part of the nature of a slaw, but it was  bit labor intensive shredding all of the vegetables. I used a 4 sided shredder to grate the carrots and even some of the cabbage, which produced a very small and somewhat wet cabbage. It was a bit tricky to mix the noodles and vegetables together so I might cut the noodles in half before cooking if I make this again. The toppings made a  big difference in the overall product.
