This is the only bean pizza casserole I found with the suggestions of smashing some ahead of time and using chickpeas…both great suggestions! We made with one can great northern and one can chickpeas. I also didn’t have tomato paste on hand, so used a 14oz jar of pizza sauce and skipped the water. Added some bell pepper too. Broiled at the very end to brown the top a little more. Delicious!!

This was so yummy! I asked my husband if it was a keeper and he said, “Yep, like once a week!” I used a big (I think 10”) cast iron skillet to cook it in. And I did mash 1/2 cup of chickpeas and added red pepper flakes to give it some zing. I also didn’t measure the spinach, because I love fresh spinach and probably added twice the amount ;-)) But I didn’t add any basil. It is quick, easy and so delicious!

We loved this! I did add some ingredients from the SK recipe (carrots, celery and red wine) but I liked your addition of tomato paste rather than just canned tomatoes. It was definitely pizza-y! Like all these tomato things, the flavour is even better the next day.

I made this recipe tonight and it was a huge hit! I will be making it again for sure. I used the spinach and I added grape tomatoes with the onions because I had them on hand. Otherwise I followed the recipe and it came out perfect!
