Hey Kate! If I were going to make this with half the amounts of Cheese would you suggest we cut back on the other ingredients too? What about the Pumpkin?

Made this for the first time and my daughter and son in law loved it! The taste is perfect. However, I am curious if you think this would still turn out if I were to use half the cheese as well? Thank you Kate!

Another great recipe from Cookie and Kate. Having just made the Spinach Lasagna last week (amazing), I thought the pumpkin mac & cheese sounded interesting, and it did not disappoint. Everyone I mentioned it to thought "ooo, pumpkin mac & cheese" but this is not pie sweet pumpkin, it is way better, savory and warm and filling. Followed the recipe and used the Jovial GF pasta (just keep in mind that this pasta cooks much quicker, so 8 mins in step 2 would be way too much time). Thanks Kate.

Such a cozy fall-comfort recipe, I love how creamy and rich it turns out, especially using just one pot. I could totally imgaine pairing this with some crusty bread or a fresh salad.
Thanks for sharing this delicious twist!

I seldom rate a recipe but this was so good, I told my husband I wanted to lick my plate. I made it exactly as written, using the pumpkin pie spices suggested in the notes. I was afraid the onion and garlic powders would take away from the flavor of the pumpkin pie spices. However, I was wrong. The flavors were perfectly balanced. The technique to make the pumpkin mac and cheese was different than I'd used in the past, but your directions were clear and simple to follow. I would suggest to others making this dish, to have your ingredients prepped and measured out before you start cooking. Then the dish will then go together perfectly. Is there a way to make this ahead for a dinner party or pot luck?

I have a similar question. Your conversions for Parmesan are incorrect (a 1/2 cup would be 4 oz, not 2), so I’m questioning all the conversions. I know weight is more accurate but I don’t have those tools and rely on cups equivalent.
