We love your recipes, thank you for sharing them! :)
For this one, I included sweetcorn, used the spices you have for the mexican enchilada recipe, and actually made little parcels so all the stuff didn’t fall out of them! I was in a rush to get to an appointment, so I cooked them on too high a heat….but despite the slightly charred bits, my family wolfed them down. Next time I’ll cook them on a lower heat for a bit longer.

I haven’t made a lot of quesadillas but that will change thanks to this recipe. I mixed salsa with light sour cream for dipping, along with hot sauce. It’s on my menu to have again this week! I also think it would be a great meal prep lunch for all week.

Thank you for the reminder how quick, easy and fun quesadillas are. My favorite filling is mushrooms & spinach with brie cheese but I have all the ingredients to cook yours up right now – so I’m on my way!

hi, i should have looked at your site first! anyway, i sprinkled cheese on the tortilla and then added peppers, green, red, yellow, onions and mushrooms then cheese again! delicious but the tortilla would not stay closed. I am going to try your way next time. Love these meals. thanks for sharing,
