This was great but...I think the balance of curly parsley to quinoa was off. I ended up adding another 1/2 cup of quinoa (before cooking) to it as well as more cucumber, tomatoes and scallions (and dressing) the next day. Maybe my bunches of parsley were extremely large?

In general, I LOVE your salad recipes and always recommend your site to friends.

Oh, my God! This is soooo delicious!!
I made this Tabbouleh for the first time yesterday and my family loved it! It was gone in an instant, unfortunately (so no leftovers to enjoy today).
It is easy to make it, quite fun as well. I paired it with hummus and falafel balls and it was a dream... :D
The only mystery regarding this recipe for me is why doesn't it have like a million likes ;)

Great recipe, Kate. Thanks. One small suggestion: cooking quinoa with 1 cup H20 to 1 cup quinoa produces a much nicer texture (still thoroughly cooked but with a nice springy consistency instead of mushy). I am surprised that most recipes call for 2 cups of water to 1 cup of quinoa (which works well for white rice but makes quinoa quite overcooked). My wife and I started cooking quinoa 1 to 1 about twenty-five years ago and have never looked back. Just try it once and you'll see what I mean!

This turned out fantastic! I tasted the dressing as I was making it and I had some doubts for a minute, but even my kinda-picky husband liked this salad. 10/10, will make for my vegan houseguests (and for myself with a nicely marinated steak).

This was delicious…slightly less parsley and a bit more cucumber and tomatoes. Was so key to let the cukes and tomato sit first. Didn’t add chick peas but did serve with hummus and toasted pita. I also sprinkled some sumac on right before serving. Most excellent dinner
