Just wow!! Found Farro to use and everyone marveled at this dish at Thanksgiving this year. Tge skins brought an extra layer of texture to the dish and I’m definitely using the ginger dressing on other salads. I made it a second time and added cold smoked salmon and it was so tasty again! Thanks so much!!

Loved this! I added feta and subbed farro for the wheat berries and pomegranates for the dried cranberries. Per the recipe, I didn’t peel the squash but probably would next time. It was a little chewy. Overall, this is a great fresh fall dinner salad. Thanks for the idea!

1-31-2021 made with wheat berries for the grain and gala apple. Yummy salad with a lightly sweet taste overtone. Wheat berries were very nice in this.

It’s perfect. Made it for Canadian thanksgiving and it paired beautifully with everything else – this is a very hearty & flavourful salad.

I found it was good to start this one early so everything has time to cool in the fridge before final assembly.

The ginger dressing is superb. Thank you!

Hi Kate, this my first ever appreciation post but thought it was time I finally said thank you for your recipes that just work and are so clear. I read about this one yesterday, made it tonight and struggled to stop eating it – so delish. I used large cous cous, and subbed walnuts for pecans (will be tripling that next time!!!) and roasted pumpkin. Loved the combination of flavours, especially the hit of ginger in the dressing. I made this as a side for Thanksgiving dinner and it was tasty – the instructions weren’t clear about the butternut squash skin so we left it on, which worked ok. The ratio was way too low of arugula to everything else, so next time I would halve the farro (or wheat berries) and increase the pecans. The apples didn’t add anything to the flavor so I’d leave them off next time.
