In reply to Jennifer Gamble. Hi Jennifer, thank you for your kind words about Cookie. As for the risotto, I haven't tried it in a crock pot. You could make it ahead and keep it warm in the crock pot, but I would want to test before relying on that cooking method for a holiday dinner.

I was thinking about making this for Thanksgiving. In lieu of baking it, what are your thoughts about putting it in a crockpot? With only one oven and that is saved for the turkey, I try to think of different dishes I can do in the crockpot or instant pot.

Anyway Kate please let me know your thoughts.

P.S. I am very sorry to hear about Cookie . Our furry little friends are a huge part of our life.

Hi Kate,

This was so good!! Everyone loved it! Even our doggies Meloni and Molly were thrilled after a small taste. I think I might try it next time with less butter and use olive oil. Maybe 1/2 c of the parmesan…just to bring down the calories a bit. But just wanted you to know it was truly wonderful! Thank you

I made kale as a side – sauteed it with oil, salt and pepper after massaging it with the oil. It was a perfect side! It also tastes great mixed into the risotto after cooking them separately.

The risotto was fabulous, by the way!
