We made this for our Saturday night dinner – we roasted a mixture of eggplant and mushrooms. The miso brown-butter sauce is wonderful. It made a wonderful meal and we cannot wait to eat the leftovers.

This is a regular with us. My husband has it down to a fine art and has found a delicious white organic miso we get at the Japanese grocer’s. I can’t think of any tweaks and tunes. It is perfect.
