I’ve made this so many times, using whatever nuts I have on hand…walnut, pecan, macadamia, almond, pumpkin seed; it doesn’t seem to matter. I use more nuts-6-7 cups-and same everything else because we eat them quickly and want a little less sweetness. I love the method of cooking these, and how I don’t have to cook the syrup in a separate pot, stirring until just the right moment. I’m about to make a new batch, using only pecans and walnuts and maybe some peanuts. I need a trip to Costco! Thanks for this recipe.

In reply to Cookie and Kate. Thanks for getting back to me Kate, that’s good to know! I wasn’t sure if I’d roasted them on a tray that was a bit small and needed to spread them out a bit more. They are so delicious, thanks for a great recipe…..I’m planning to make another batch this week to take to my daughter’s next weekend.

Hi Kate, I made these earlier, they are fantastic, so delicious! I made the recipe as written minus the cayenne. Although when they cooled they were a little sticky, how can I avoid that next time? Thank you!

This recipe is fantastic! It is my new go to for everyday and when I entertain. I have also made peanut butter out of this recipe and have played around with different flavors to add. For example, cinnamon, clove or cardamom. Cashews are a wonderful add in. You just need to make sure you let them fully cool before storing. They do become crunchy! I get so many compliments on this recipe! Thank you so much for posting it!!!

Great recipe! Used almonds and cashews, the extra maple syrup, and had fine sea salt so reduced it by about half per excellent recommendation. Came out perfectly and the coating keeps the nuts fresh for a long time. Irresistible! Will definitely make these again.
