Finally made this today with some golden beets I found at the farmers market. Followed the recipe exactly and dressed with “favorite balsamic dressing”. So good!
I’m sure it would be delicious with “Love Beets” for anyone skeptical of raw beets, but really outstanding just as written!

So So Good. Came together quickly too as I used Love Beets (cooked). The flavors of the arugula, beets and feta all play off each other when hit with the yummy balsamic vinaigrette; it is perfect. For a quick, easy and delicious salad/dinner, I loved everything about it.

Loved this recipe though made it with one of your other dressings as kind of gone off balsamic vinegar recently. If making as a side salad, what would you recommend for a main? Thanks!

Thanks Kate for another great recipe. This was really nice and simple. I used cooked beets however because they often sell them like that where I live. I will definitely be making this again.
