We follow this recipe for quick pickling our green beans. We do let them sit a couple of days before they hit their absolute perfection.
(Adding a tsp of red pepper flakes is a major hit)

In reply to Karen. Hi Karen, you can use regular oregano if you can't find Mexican oregano, but it would be available in a Latin Market or any grocery with a well-stocked international section.

I have ur cookbook (and gave one to my daughter) and cook ur amazing recipes all the time! I want to make this, but i cannot find organic mexican oregano. Any suggestions for substitutions?

So many herbs and spices work in them to build different flavor profiles -- mustard seeds, coriander seeds, cumin seeds, and even fennel seeds are all options. I encourage you to experiment with flavors you know you like to build your own favorite quick-pickled veggies.

This is over-the-top delicious. I made a double batch, threw in some broccoli as well, and used purple cauliflower to infuse everything with color. They’re a big hit and not lasting long around here, so time to make more. Like so many things, I’ll never buy store-bought again. Thanks so much!

Newbie here. Do you use regular table salt or pickling salt?
