					<description><![CDATA[I wanted to make a quick Mac and Cheese for lunch today, so I tried out this recipe! It turned out pretty well! I definitely changed a few things though based on the ingredients that I had available. I used skim milk instead of heavy cream, and I didn’t include the mustard or onion powder. I added 1-2tbsp of butter to the sauce as well, since I usually do this with boxed Mac and Cheese. After reading the comments, I also decided to pulse my pre-shredded cheddar cheese in my food processor so that it would melt better into the cheese sauce. I made sure to add the cheese little by little and whisk vigorously the entire time, and the sauce came together beautifully. I didn’t have any of the issues that others in the comments had, so maybe these additional two steps made the difference! Overall great recipe, easy to customize, and now I know that I never have to stock boxed Mac and Cheese in my pantry!]]></description>
