<p><strong>We&rsquo;re going back to Sicily! Pasta alla Norma is a delicious Sicilian pasta dish with eggplant, marinara and basil.</strong> I&rsquo;m excited to introduce you to this dish because it is a <em>completely</em> satisfying vegetarian dinner. If you enjoy <a href="https://14.canadaremotejob.infinityfreeapp.com/italian-eggplant-parmesan-recipe/">eggplant Parmesan</a>, you&rsquo;re going to love pasta alla Norma. I&rsquo;m craving a bowl as I type.</p>



<p>Most pasta alla Norma recipes are made with fried eggplant, but this recipe features roasted eggplant. Eggplant really absorbs oil like a sponge, so this lightens up the dish. Another plus? Roasting eggplant is easier and less messy.</p>



<p>I further lightened this classic recipe by using more eggplant and less pasta, so this dish won&rsquo;t put you to sleep. It&rsquo;s nice and saucy, just the way I like it.</p>

<p>I don&rsquo;t speak Italian, so I first assumed that &ldquo;norma&rdquo; meant eggplant. Not the case! Norma is capitalized because <em>she&rsquo;s a lady.</em> Or an opera, depending on how you look at it.</p>



<p><em>Here&rsquo;s the backstory:</em> Pasta alla Norma comes from Catania, a city on the eastern coast of Sicily. Catania is the hometown of Vincenzo Bellini, an Italian opera composer who lived in the early 1800s. One of Bellini&rsquo;s most famous operas, Norma, is named after its lead character.</p>



<p><a href="https://www.italymagazine.com/dual-language/essence-sicily-dish-pasta-alla-norma" target="_blank" rel="noopener noreferrer">Folklore has it</a> that playwright Nino Martoglio, after his first bite of this pasta dish, exclaimed, &ldquo;Chista &egrave; &lsquo;na vera Norma!&rdquo; (&ldquo;This is a true Norma!&rdquo;) That&rsquo;s quite a compliment.</p>

<p><strong>Let&rsquo;s make homemade caponata!</strong> This classic Sicilian appetizer or side dish is perfect for late summer meals. <em>This</em> recipe combines roasted (not fried) eggplant with saut&eacute;ed bell pepper, celery, tomatoes, olives and capers. Red wine vinegar and honey make it irresistibly tangy and sweet. If you generally enjoy these bold flavors, you&rsquo;re going to <em>love</em> caponata.</p>



<p>Since international travel is largely off the table, I&rsquo;ve been traveling vicariously through my food. This caponata is the perfect example. I&rsquo;ve yet to make my way to Sicily to sample authentic caponata, but learning to make this dish has deepened my desire to explore the island. Mark my words, I&rsquo;ll get there someday.</p>

<p>Caponata recipes vary from region to region and household to household. This recipe is where I landed. I took some cooking cues from my <a href="https://14.canadaremotejob.infinityfreeapp.com/best-ratatouille-recipe/">ratatouille recipe</a>, which also features roasted eggplant stirred into a simmering tomato sauce. Caponata&rsquo;s flavors are even deeper and more complex largely due to the intense <em>agrodolce</em> factor, or the interplay between sweet (honey and raisins) and sour (vinegar and capers).</p>



<p>I can&rsquo;t claim this recipe is entirely authentic, but I hope it offers you a little taste of Sicily.</p>

<p><strong>It&rsquo;s ratatouille season!</strong> Ratatouille is a classic end-of-summer French stew that&rsquo;s fun to say (rat-tuh-TOO-ee) and fun to make. It&rsquo;s packed with fresh produce: tomatoes, eggplant, zucchini and yellow squash, and bell pepper.</p>



<p>This summer, we sampled authentic French ratatouille in Provence. I liked some ratatouille more than others, so I vowed to come up with my own favorite ratatouille recipe when I came home. Today is the day!</p>

<p><strong>In Provence, ratatouille is typically cooked on the stove.</strong> Each vegetable is cooked in olive oil until it&rsquo;s properly tender. In the end, all of the ingredients are combined and simmered to meld the flavors.</p>



<p><strong>The French know how to cook, and this concept is definitely one to follow.</strong> Ratatouille combines a large volume of late-summer vegetables that have different cook times. If you tried to throw them all into a pot at once, none of the veggies would have a chance to caramelize, the eggplant would fall apart by the time the zucchini is tender, and your ratatouille would probably never meet its full potential.</p>



<p><strong>This recipe is a little different.</strong> We&rsquo;re going to <em>roast</em> the vegetables until they&rsquo;re deliciously caramelized on the edges and a little dehydrated (no squeaky or mushy zucchini here). Then, we&rsquo;ll add those perfectly roasted veggies to a simmering fresh tomato sauce.</p>



<p><strong>This method yields <em>amazing</em> ratatouille.</strong> My husband says it&rsquo;s the best he&rsquo;s ever had. It&rsquo;s also easier to make than proper stovetop ratatouille, since it requires less time standing over the stove. Hooray!</p>

<p><strong>I see you rolling your eyes over there.</strong> &ldquo;Kate, all eggplant Parmesans are Italian!&rdquo; Let me clarify. In Italy, true eggplant Parmesan (Melanzane alla Parmigiana) is <a href="https://www.seriouseats.com/recipes/2014/08/italian-style-eggplant-parmesan-melanzane-alla-parmigiana-recipe.html" target="_blank" rel="noopener noreferrer">breading-free</a>. Apparently, we Americans decided to coat our eggplant in egg wash and breading.</p>



<p><strong>Another shocker?</strong> Italians <a href="https://www.seriouseats.com/2017/04/how-to-make-real-deal-fettuccine-alfredo-sauce.html" target="_blank" rel="noopener noreferrer">don&rsquo;t pour any cream into their fettuccine Alfredo</a>! Let&rsquo;s now turn to give a collective eye roll at Olive Garden.</p>



<p>Jokes aside, <strong>this baked eggplant Parmesan is everything I want eggplant Parm to be.</strong> This recipe is made entirely from scratch, but it&rsquo;s simple to prepare. We&rsquo;ll roast the eggplant slices instead of frying them. Then we&rsquo;ll assemble the dish and bake it. Easy!</p>

<p><strong>We&rsquo;ll also skip the breading, which makes this eggplant Parmesan gluten free. </strong>Without the breading as distraction, the eggplant flavor really shines through. This dish might look super cheesy (ok, it <em>is</em> cheesy) but most of the cheese is on top of the dish so it can develop that irresistible golden crust.</p>



<p><strong>This recipe is healthier than most American eggplant Parmesans,</strong> but tastes like my nonexistent Italian grandmother made it. I made a quick homemade marinara out of tomato paste and fire-roasted tomatoes, which make it taste like it&rsquo;s been simmering on the stove for hours. If you&rsquo;re in a time crunch or looking to simplify, though, you can absolutely use your favorite jarred marinara.</p>

<p>In its most basic form, baba ganoush is made with eggplant, tahini, olive oil, lemon juice, garlic and salt. I found that adding a tiny bit of ground cumin, smoked paprika and fresh parsley takes it to the next level.</p>



<p>Baba ganoush <em>is</em> similar to hummus, but it calls for grilled or roasted eggplant instead of chickpeas. Both dips originated in the Eastern Mediterranean, and they&rsquo;re often served together with pita bread and raw, crisp veggies. You can use baba ganoush like you would hummus&mdash;as a dip or spread. Ready to make some?!</p>

<p>I designed the cookbook&rsquo;s recipe list to be more season-less than seasonal, because I want most of the recipes to appeal to you and be available to you year-round. That means I&rsquo;ve been reserving the super seasonal recipes for the blog, which is fun because I can publish them when they&rsquo;re prime for the making.</p>



<p>Like, this pasta dish. It&rsquo;s perfect for this time of year. It&rsquo;s not too hot outside to crank up the oven and roast eggplant, which is at its peak right now. I&rsquo;ve had an odd hankering for roasted eggplant ever since I made <a href="https://14.canadaremotejob.infinityfreeapp.com/mediterranean-quinoa-salad-recipe/">Anna&rsquo;s Mediterranean quinoa salad</a>. Most people describe eggplant as bitter, but I&rsquo;d say it&rsquo;s borderline sour. Tangy. Pillowy. Hearty. So good, if paired with the right flavors.</p>

<p>When I was young, my mom published a few travel books about Oklahoma. This was back before you could even Google, &ldquo;How to self-publish a book,&rdquo; and find answers. She made those books happen, though, and I got to sit shotgun on our way to book signings. Back then, all I wanted to do was read, so I&rsquo;d get lost in the children&rsquo;s section while she sold and signed books.</p>



<p>I know how much goes into self publishing&mdash;writing a book is a feat in itself, so to take on the printing, distribution and marketing as well is a major accomplishment. Huge, really. Congrats, Anna, and thank you for this delicious recipe.</p>

<p>Shortly after arriving at college, I decided to study abroad. It was one of those rare and beautiful decisions that seem to make themselves. I had studied French for several years in high school, so I would go to France, of course.</p>



<p>Just a couple of weeks after turning twenty-one, I boarded a plane to Paris with two other girls, wide-eyed and ready for adventure. I hardly remember packing for the trip, but I clearly recall the combined thrill of confusion, exhaustion and embarrassment that followed upon landing on a foreign continent.</p>

<p>Somehow, we found our way from Paris to Bordeaux, first via train, then tram. Along the way, we heaved our luggage up long flights of stairs and squeezed them into our travel compartments. Our final test was pulling our belongings behind us across an endless gravel parking lot to our dilapidated dorm buildings. Given the option to either laugh or cry, I found myself giggling like a maniac as my wrists went numb from the vibrations and my arms threatened to fall clean off.</p>

<p>A few Saturday nights ago, I stayed in and spent the evening testing roasted eggplant techniques. Good grief, I&rsquo;m 27 going on 70! Salted vs. unsalted, halved vs. cubed, skin on vs. peeled. I decided on unsalted, cubed and peeled. You&rsquo;ll see that I didn&rsquo;t completely peel the eggplants in these photos. I wanted to verify my peeled verdict (ok, I was being lazy) and later regretted it.</p>
