I&rsquo;m so glad to have found this recipe in <a href="https://whatsgabycooking.com/" target="_blank" rel="noopener">Gaby Dalkin</a>&rsquo;s latest book, <a href="https://rstyle.me/+cZdcEnhkISZecv6jGA6vLQ" target="_blank" rel="nofollow noopener">Take It Easy</a>. She sent me the book when it came out last fall and this recipe has saved us from ordering take-out several nights since then.</p>



<p><strong>This pasta with peas and pesto comes together in under 30 minutes with basic ingredients and minimal fuss.</strong> It&rsquo;s a fun, veggie-forward spin on <a href="https://14.canadaremotejob.infinityfreeapp.com/pesto-pasta/">classic pesto pasta</a> designed for frozen peas. It&rsquo;s great with store-bought pesto, though you can always <a href="https://14.canadaremotejob.infinityfreeapp.com/how-to-make-basil-pesto/">make your own</a>.</p>



<p>I can make this recipe with a toddler running around the kitchen, which says something, if you know what I mean. Grace enjoyed the leftovers for lunch today.</p>

<p><strong>I love how this recipe comes together with just one pot and one bowl.</strong> To make it, you&rsquo;ll bring a large pot of salted water to boil for the noodles. In the meantime, you can quickly defrost frozen peas in a colander by running cool water over them in the sink.</p>



<p>The peas taste so fresh and nice because <em>they are not cooked.</em> Gaby simply instructs us to whisk together a sauce of olive oil, lemon, garlic and Pecorino Romano cheese. Then we mash up about half of the peas into the sauce, leaving the rest whole. Add the warm pasta to temper the garlic, stir in some pesto, and your dinner is almost ready to go. Thank you for this one, Gaby!</p>

<p>Spring is here! It switched on like a light bulb about a week ago in Kansas City. The daffodils are on their way up, the birds are chirping, and Cookie and I are thrilled. I&rsquo;m literally humming, &ldquo;The hills are alive,&rdquo; on our walks around the neighborhood.</p>



<p>Today, I wanted to share a shockingly green pasta dish with you. It&rsquo;s easy to make, nourishing and comforting, which is exactly what we need right now. I wouldn&rsquo;t blame you if you find the color off-putting, but I <em>promise</em> it&rsquo;s so tasty!</p>

<p>The cool thing about this dish is that we use the same pot of water to cook the kale (including the kale stems), pasta and peas. You&rsquo;ll need to set a few timers. It&rsquo;s not complicated, but maybe wait to pour another glass of wine until you&rsquo;re sitting down to eat.</p>



<p>Once it all comes together, this dish almost tastes like deconstructed ravioli. It&rsquo;s bright green and punctuated with tender peas and creamy ricotta. Make some for dinner tonight?</p>

<p>Finally! It&rsquo;s about time this blog offered a traditional minestrone soup recipe. <strong>Minestrone is a hearty Italian vegetable soup</strong> made with tomato-y broth and pasta or rice. I&rsquo;ve been working hard on this recipe and I&rsquo;m so excited to share it with you.</p>



<p>Minestrone was traditionally made to use up leftover vegetables, so feel free to <strong>use any seasonal vegetables and greens you have on hand.</strong> I used potatoes and spinach for the soup you see here, and it was absolutely delicious.</p>

<p>I listed some alternatives in the recipe, including yellow squash, zucchini, butternut squash, green beans or peas. That means that you can make seasonal minestrone on cool days from fall through spring!</p>



<p>I used canned beans here instead of cooking my own, which cuts the cooking time down to a reasonable weeknight level. The remaining ingredients are basic pantry items, including canned tomatoes, pasta, basic spices and onions.</p>

<p><strong>I&rsquo;m so excited about this paella recipe!</strong> I hope you are, too. Paella is a beautiful rice dish hailing from the east coast of Spain, near the port city of Valencia. I tried it for the first time in Barcelona about ten years ago, and none of the American versions I&rsquo;ve sampled since then have come close&mdash;until now.</p>



<p>Paella often includes seafood or meat, but I made this paella vegetarian by mixing chickpeas into the rice and adding extra vegetables. If you were to order this in a Spanish restaurant, it would be called <em>paella de verduras</em> (vegetables). My version is fresh, colorful, and hearty, thanks to brown rice and chickpeas.</p>

<p><strong>This paella is a great party option if your guests are following special diets.</strong> It&rsquo;s vegan/vegetarian/dairy free, gluten free, nut free, and soy free. Although, I&rsquo;d say it&rsquo;s a great party option in general! Just add a big green salad and Spanish wine (red or white would work).</p>

<p>Blink. This risotto has been on my list since I figured out <a href="https://14.canadaremotejob.infinityfreeapp.com/easy-brown-rice-risotto-with-mushrooms-and-fresh-oregano/">how to make baked brown rice risotto</a> last fall. Risotto made with brown rice takes almost twice as long to cook (fact), but my method of baking it in a Dutch oven and stirring it for just a few minutes at the end seriously cuts down on effort.</p>



<p>For this springtime take on risotto, I kept it simple and steamed the peas in the pot during the last ten minutes of baking. I opted to roast the asparagus while the pot is in the oven, since <a href="https://14.canadaremotejob.infinityfreeapp.com/perfect-roasted-asparagus-recipe/">roasted asparagus</a>&nbsp;tastes best.</p>



<p>It all comes together painlessly and leaves plenty of time to clean up and sip some leftover white wine while the risotto bakes in the oven. Let me know how you like it!</p>

<p>I&rsquo;d almost forgotten how much I enjoy live music. Isn&rsquo;t that terrible? I just don&rsquo;t keep up with shows that come through town because I don&rsquo;t have a default music buddy to go with me. Since I&rsquo;m &ldquo;the friend who&rsquo;s up for anything!&rdquo; I drove right there to meet them. And it was AWESOME.</p>



<p>Few sights fill me with more glee than watching others jam out in their own element, and Ok Go really jammed out. The visuals! The dancing! The brilliant, unique, goofy determination and talent behind it all! That&rsquo;s self-actualization at its finest, not to mention most entertaining. I loved every minute of it.</p>

<p>I experience the same tizzy awe every time I crack open a book created by a friend. The newest arrival is <a href="https://www.amazon.com/gp/product/1592336582/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=1592336582&amp;linkCode=as2&amp;tag=cooandkat-20&amp;linkId=3SKVTD4VY5FBKOPL" target="_blank" rel="nofollow noopener">The Easy Vegetarian Kitchen</a> by Erin Alderson of <a href="https://naturallyella.com/" target="_blank" rel="noopener">Naturally Ella</a>. It&rsquo;s a cookbook that offers fifty base recipes, each with four seasonal variations, for a total of two hundred. Erin is a recipe-creating machine and I love having a tangible copy of her hard work.</p>



<p>Erin asked me to help her test out the recipes for this book last year and this salad was one of them. Now that I can share it with the world, I just couldn&rsquo;t resist. This spring panzanella features fresh greens, raw peas (which are really good!) and pea shoots (found at Trader Joe&rsquo;s), thinly sliced fennel and freshly baked, whole grain croutons tossed in a lemony dressing. Her final recipe calls for minced garlic scapes, which are green onion-like shoots that grow out of garlic if you let them. I used pressed garlic instead. Congrats on a job well done, Erin!</p>

<p>I feel good this morning. I haven&rsquo;t felt so hot for the past few days, so I noticed. I&rsquo;m not sure what it was, but I&rsquo;m on the mend. I&rsquo;ve been throwing together one-serving meals that don&rsquo;t leave a family-sized mess to clean up. It&rsquo;s been a good reminder that simple, quick and wholesome recipes are always much needed and appreciated.</p>

<p>This eggs-on-toast recipe is just that. It&rsquo;s super simple and ready in ten minutes. You can prepare your eggs however you&rsquo;d like&mdash;<a href="https://14.canadaremotejob.infinityfreeapp.com/perfect-scrambled-eggs/">scrambled</a>, <a href="https://14.canadaremotejob.infinityfreeapp.com/favorite-fried-eggs-recipe/">fried</a>, even poached.</p>



<p>Toast your bread and slather on a healthy amount of goat cheese (or smashed avocado, ricotta, hummus). Prepare some vegetables to provide a fresh component (I used peas for a spring version, but can&rsquo;t wait to try sliced heirloom tomatoes this summer).</p>



<p>Top with egg, salt and pepper, and a sprinkling of fresh herbs. I opted for dill because I really love dill, but any leafy herb will do, like basil, parsley, mint, cilantro or chives. And you&rsquo;re done!</p>
