I made this with crispy tempeh for protein and everyone was a fan-even my picky 10 year-old. He did request less vegetables, but still ate all the vegetables . I served it with thai basil, cilantro and lime. Next time I will double bc we did not have leftovers and this would pack a great lunch the next day.
