This is so yummy. I’ve been hunting for a vegan Mac n cheese that isn’t gummy and thick. I used broccolini because I didn’t have broccoli and it was really good. Waiting for my hubby to come home and try it. I already ate mine because I couldn’t wait! :) Thanks so much.

Thank you! This was amazing and a good way to get my fussy child to eat broccoli and i am not vegan but u would never tell this was vegan
I added vegan Tex Mex shredded cheese and smoked vegan cheddar
Parmalet is one of the best as we do not like diaya

I was skeptical. I was SO skeptical, but I also HAD to try it. And let me tell you, after the first bite, I was in Macaroni and Cheese HEAVEN! My daughter giggled as I went on and on with each bite saying “I can’t believe how good this is!!” She is not a vegan, but she tasted it and said, “Oh WOW! You’re right. That’s really GOOD!” The only thing I did differently was I used 2 teaspoons of freshly squeezed lemon juice because I didn’t have vinegar. This is truly the BEST Mac and Cheese I have ever had ~ vegan or not! I cannot thank you enough!

I have tried so many vegan mac and cheeses but this is my new favorite! I put the broccoli to the side because I have littles who don’t like things mixed, but might eat them separately. Doing that left plenty of sauce for the whole 16 oz box of pasta and leave it still so creamy. My 3-year-old kept saying “yummy!” after every bite and had several servings. Thank you!

Kate, I love your recipes and have made many of them multiple times over the years. Even though I eat dairy, I crave this one periodically. Tonite I made it with wide egg noodles and sliced broccolini. I reserved the cooking water and used it in the sauce. It might be my favorite version yet!
