Made for Rose Bowl snack; wanted bigger quantity but didn’t have enough potato so made a mash up of your Queso recipe that uses carrots and this one. Huge hit at our dairy free household. Much appreciated Kate!

This recipe tastes ok but to all of you used to real queso, this isn’t even close. I feel there should have been a warning somewhere because I have made dairy free items before that matched the original concept better.

Hey there. I tried this and your sour cream recipe, they both taste delicious but I’m ending up with a very grainy texture (presumably from the blended cashews) that’s a bit unpleasant. I do soak the cashews, do I just need a more powerful blender, or is this texture normal?

Here’s my complaint about this recipe: It’s too good and I ate way too much of it.

On one hand, that makes it the most successful vegan replacement dish I’ve ever made.

On the other hand, it’s too close to the real thing because it’s been two hours now and my stomach still feels full of vegan queso. (Ha!)
