Good Morning. I have made this soup and it is fantastic. I use it all year round. I was wondering if you ever tried it in a crockpot. I am in need of a dump and run option (no vegetable abuse, I promise).

I may have reviewed this before, I cant remember but here we go again

I never liked veggie soup…. Ever!

But I made this during the pandemic and I lived on it! It’s the only veggie soup I like!

Today my body was craving some serious veg, so I thought what better way then the “Seriously Good Veggie Soup” recipe!

It made me remember why I only wanted to eat this soup for like a year! Its soooo delicious! Perfectly fitting name!

It will always be in my favorites! 10 out of 10!!!

I have made this recipe probably 30 times and it is a fan favorite every time! I’ve used a variety of veggies, and I always double the recipe to share with neighbors. When we have carnivores over for dinner, I have organic shredded roasted chicken for them to add.

Gotta say, just made this soup on a snow day…lotsa taste and with a little kick (I was generous with the hot pepper flakes)! Highly recommend. Don’t skimp with the garlic..it may seem like a lot but it’s the backdrop of the taste…and the lemon at the end, really finished it off (brightens it up)! Thank you!

In reply to Deb. I keep returning to this recipe because the proportions and variability make it easy to use whatever vegetables I have on hand. The spices and herbs are perfectly balanced, too. I was unsure about adding curry, but it brings a nice depth of flavor to the soup (also, shoutout to Penzy's The Now Curry). I've made this with chicken or vegetable stock, whatever is in the freezer, and it's delicious every time!
