In reply to Su. Hi Su, I would freeze after cooking. It will defrost easily overnight in the refrigerator, and you can reheat in the microwave or on the stove.

I want to try this for a family reunion as a vegetarian option (there will be several vegetarians there), but I know at least a couple people don’t like cilantro. I personally love it, but I will likely choose to leave it out. Any idea if it will still taste good without it, or is there a substitution you would recommend?

Hello Kate,
Just yum! I made a few modifications, this being a veggie chili, it came out more like a vegetable chili soup, but it’s delish! Spicy, sweet notes, and very tasty! For my first veggie chili, and without any meat, it was really tasty! A 5 stars for a delicious chili recipe!
