Made the roasted veg casserole for the first time tonight. Delicious. Big hit with my husband and guests. Roasted the veggies and then assembled the casserole in the afternoon. Kept in the fridge till dinnertime. Brought to room temp first then into the oven per instructions. Could have heated up a bit longer. Served with Mexican rice, guacamole, salsa. Will def make again. Thanks!

In reply to Kathy. Hi Kathy, I use corn tortillas and don't cook them prior to assembly. You should only need to cook tortillas if making them from masa.

Hearty yummy Mexican casserole. I made this vegan with the cashew sour cream recipe & daiya oat milk Mexican cheese added between the layers and on top. My daughter and son-in-law added a mexican relish with sunnies & pepitas I discovered at Trader Joe’s recently. Thanks, Kate, this recipe is a keeper!

This was really good! I used a mild salsa, added sharp cheddar to the Monterrey Jack, and sprayed the tortillas with olive oil before putting them in the casserole. I also seasoned the veggies with garlic powder, chili powder, and ancho chili powder in addition to the cumin. Carnivore husband and teenage son both agreed this should be on the Tex mex night rotation!
