In reply to Lisa. Hi Lisa, I have had good luck with Whole Foods 365 blend and Trader Joe's "carb friendly" tortillas (they are whole wheat with high fiber). I also enjoy a local brand called Stacey's. Others have shared they like the Siete brand of non-wheat varieties.

In reply to Brenda. This is so passive aggressive! If this recipe is not suitable for your husband, don't make it for him! It's not Cookie & Kate's job to cater to your family's food requirements.. There will be lots of recipes online that would be more suitable. Keep looking and you'll find what you need!

These veggie black bean enchiladas look incredible! I love how they’re packed with broccoli, spinach, bell peppers, and black beans, making them both hearty and nutritious. In reply to mary. Hi Mary, yes you can freeze and then bake. Just make sure they get to an internal temperature of 165F.

In reply to Kaitlin. Hi Kaitlin, you add 2 tablespoons to the filling mixture, coat the bottom of the pan, and then cover the top. If you like yours less saucy, you might have left overs. The sauce freezes well and can be used in many other dishes.

Love this recipe! My family asks for it every time they come to visit. Can the frozen enchiladas be allowed to defrost in fridge and then bake as per recipe?
