Hi Kim, it wasn’t that long ago that I wasn’t familiar with halloumi! I think it is becoming more common. I love the salty flavor, and find it complements recipes that have a sweet or fruit-forward component and an herby sauce.

The flavours in this recipe are perfectly balanced. I veganized this by using Green Goddess vegan halloumi and made your mango salsa instead because I had mangoes in the fridge. But the aji verde really makes the dish. So so delish.
