Adapted to what I had on hand (including time– needed a quick nutritious bite at midnight): a couple of scallions, sliced into 1″ pieces, 1/2 a yellow squash, grated and squeezed dry, sauteed in a bit of olive oil (faster than slicing, and it cooks faster). I added 1 egg to the mixture, and scrambled it all. Split between two corn tortillas. Took about 8 minutes to make. I’m not a big fan of yellow squash but I get a lot in my CSA share and this was a good way to use some up.

I’m going to make these right now before we head out for a busy Sunday. However, I’m going to add some fried breakfast potatoes that the kids like. Thanks for the great recipe I always enjoy the vegetarian recipes on your site.

Your recipes look so delicious and healthy. . . . I unfortunately have to
watch my salt (sodium) intake because of high blood pressure, but something else can be substituted. . . . will give one of your tacos a try.
