Wow, these were really, really good. I made a couple slight modifications:

-doubled the recipe
-used half fresh-milled einkorn whole wheat flour, half King Arthur AP
-used sight olive oil instead of melted fats—I was anxious about melted fat congealing and making the batter weird
-threw a healthy handful of blueberries into the batter

10/10, this is the new house pancake!

My husband was so impressed with these pancakes, I did use 3/4 C. whole wheat flour and 1/4 C. Of buckwheat flour. Otherwise, I used soy milk and coconut oil.They cooked so beautifully in the no stick pan without oil.
